As promised from my previous post 'Christmas Trifle Ideation #1' I created my mini berry trifles for Christmas dessert which was a success with my family.

It was easier this time round and took less time to make in comparison to the jumbo berry trifle I made for Christmas 2012.

A great tip from the lovely lady at Liquorland was to use Bailey's Irish cream instead of the traditional Brandy or Sherry which actually tasted great and worked well with the trifle.
Mini Christmas Berry Trifle
Ingredients:
- 2 x 85g packets strawberry jelly crystals
- 1 x punnet fresh strawberries
- 1 x punnet fresh raspberries
- 1 x punnet fresh blueberries
- 1 x carton double thick vanilla custard
- 1 x packet jam rollettes
- 1/2 cup of Bailey's Irish cream
- 1 x can of whipped cream
- Extra fresh raspberries, blueberries and hulled and sliced strawberries, to serve
- Method
2. Spoon the custard over jelly. Slice each rollette into 2 cm lengths and place a sliced jam roll over custard. Drizzle with Bailey's Irish Cream.
3. Repeat step 2 again and scatter a tablespoon of the raspberries, blueberries and strawberries on top.
4. Dice a sponge rollette into 1cm cubes and scatter on top of the berries. Refrigerate overnight.
5. Drizzle custard over the rollettes.
6. Add whipped cream on top of the custard and garnish with extra raspberries, blueberries and strawberries to serve.
Thats basically it! A quick and easy dessert for Christmas lunch leaving you with plenty of time to do the Christmas shopping and spending time with family over the silly season rather being cooped up in the kitchen.
I hope you enjoyed my take on the Christmas Berry trifle. You could also jazz it up as a tropical trifle by swapping the berries with mango kiwi and passionfruit pulp - the choices are endless.
